Gradually stir in grits. Cover, reduce heat, and simmer for 10 minutes, stirring occasionally. Whisk in blue cheese and butter until melted. Add 1/4 tsp salt, heavy cream, and remaining ingredients; pour into a lightly greased 1-1/2 qt souffle dish. Bake at 350°F for 45 min-1 hour. The center will be slightly soft.
