Serrrano is my fave.  I also love ancho, green cayenne, hab, jalapeņo 
and a hugely prolific, very tasty little hybrid called Super Chile.  I've
never grown _aji amarillo_, but am doing so this year, and from the
tasterecommendations here, it sounds like I'm gonna be glad. :)
