The folks at Suburban Landscape that hosted the event as part of their 'Chile Pepper Fiesta' put together a bunch of salsas of their own. A few of the more interesting ones appear below. Greek Salsa 4 ounces Fetta Cheese 1/2 cup green onion 1/4 Ionian Olives 2 tsp Olive oil 6 pepperoncini chiles 1/2 cup tomatoes 1 tsp minced garlic 2 Grape leaves 2 Purple Serrano Chiles Caribbean Salsa 1 ripe mango, peeled, sliced & chopped 1/2 tsp Allspice 1 Tbs honey 1 Tbs minced scotch bonnet 1/4 cup green onion Mexican Salsa 1/2 cup onion 2 tsp cumin (ground) 1 tsp lime juice 1 can drained black beans 2 cups tomatoes 1/4 cup fresh cilantro 4 jalapeno peppers 2 habanero peppers Italian Salsa 1 cup tomatoes 3 jalapenos 3 serranos 2 Tbs jalapeno juice 2 Tbs capers 1/2 cup red onion 1 Tbs garlic 1 Tbs lemon juice Add pesto till mixture is creamy She had several others as well but I thought these to be the best and most interesting.
