One way to preserve lemons: Slice whole lemons lengthwise into quarters, not cutting more than 3/4's of the way through. Mix 1/4 fav chile powder with 3/4 rock salt. Stuff between "petals" of lemon. Place in jar and cover with oil. Ready in about 3 months. They get quite soft and become hot, sour and salty. ( Obviously, :) ) Use as a condiment. Nice with Greek, Arabic and Middle Eastern foods.
