It is so long since I posted anything, I was getting worried that Jim C would up stage me! After all, looka wot he dun!! Outdid hisself, that's wot! Caramba!!!(that was for your Floreeda buddy) Anyway, enuf levity, here is what I did tonight, and I really do not know what to call it.....Doug's Twasnt soup? Howzat? 1 tbls olive oil 1 Vidalia or Hawaiian onion, I used Hawaiian, diced 6 cloves garlic, minced 2 good sized carrots, minced 3 stalks celery diced 1 good sized red bell pepper, seeded and diced 2-3 habs, seeded and chopped fine 1 can rotel tomatoes with peppers 4 cups of vegetable stock 1/3 cup pearl barley 1/2 cup of dry macaroni 1 20 oz can romano beans, drained and rinsed 1 tsp oregano 1 tsp salt 1/2 tsp Jim C's smoked red Savina powder(use more at your peril!) Chopped fresh parsley to taste, sprinkled over When my better half read this sorta recipe out to me, laughed and said " you should be able to improve on this" I read it, and said" No problem!" Here is the result! In a large pot, heat the oil, and add the onion, garlic, peppers, carrots, celery, habs, and simmer until onion is transparent....do not burn the garlic! Add the salt and oregano, and simmer some more, then add the rotel, and the stock, and then the barley, beans, macaroni, and let this cook for as long as it takes to remove most of the liquid. This WAS supposed to be soup. Hah! When it looks as though it can be eaten from a plate, add the seasonings, add some water if it looks too dry, make tea biscuits to serve with it, and serve in pasta dishes, the wide ones......spectacular!!!
