My local hotsauce emporium recently started stocking a sauce called Howlin' Shiek Curry Marinade and Hotsauce. It is a little thicker than your standard hotsauce and has quite a bit of heat. Even though it uses some capsaicin extract it does not have any of the bitter flavors that can result. It has a great curry flavor too! Last night I made a stir fry of shrimp with cauliflower, carrots, red bell pepper, onions, garlic and some grape tomatoes and mushrooms. I first sauteed the veggies in some oil and added a splash of dry sherry which I let reduce. When the veggies were nearly done I tossed in the shrimp and about a quarter cup of the curry sauce. Filled the kitchen with pungent curry aroma! Tasted great and was of a moderate chilehead heat level. Will have to see what else I can do with this stuff...
