Chipotle Morita and chipotle mora are actually dried, smoked serrano chiles. The mora are larger than the morita. They are both a dried-cherry red, similar to the chipotle colorado (as opposed to the sandy-brown color of the chipotle mecos). If anyone is interested, there is another type of smoked chile that is widely used in Mexico -- the chile pasilla de Oaxaca. Contrary to its name, it is not a pasilla chile at all, but resembles a chile negro in size and shape and a chile chipotle colorado in color. High heat level (cayenne?) and absolutely astounding taste -- maybe my favorite chile of all time (although the hab is right up there). Unfortunately, I haven't been able to get these little gems since leaving New Mexico and California for Atlanta.
