Technically, 'peperoncini' is the plural of 'peperoncino', which is Italian for 'chile pepper' (any kind). You are actually refering to 'peproncini sotto aceto', which, as the name implies, are pickled in vinegar (usually a 2.5% solution, with some salt). I don't know what type is specifically used off hand, but I can look the next time I go to Italy, maybe Monday. Tom
