It seems that many of us have a hard time getting rid of zucchini-I fry them the way my granddad did-it tastes best with fresh spice. Young, tender zucchini squash-washed and sliced very thin about 2-3 lbs 1lb onion, sliced very thin 2-3 Tbsp or more fresh diced oregano or 1 Tbsp dried 2-3 Tbsp olive oil or more if needed Salt and pepper to taste Heat 2-3 Tbsp olive oil in a cast iron skillet on medium heat. Fry squash, onion, and oregano with salt and fresh ground pepper to taste until the squash are limp and the onion is translucent. Simple, easy and delicious.
