Actually, it's really more Tex-Mex, certainly not authentic Mexican, but that's OK. I've loved Tex-Mex long before I moved here. There are three Chuy's in Austin (and a fourth being built in Round Rock, not far from my house), and my family eats at one of the three about once a week (usually for lunch after Church, or some other time if we miss it). The food is not ultra-hot, and in fact would probably be considered somewhat mild for a lot of the people on this list, but they do cook with a lot of peppers, and I can spice it up with a little Red Savina powder if I need to :-) The food is good, relatively inexpensive, and plentiful. The restaurant is intentionally designed to look tacky, and they have great T-shirts (I especially like the chile pepper Yin-Yang symbol with the slogan "That which burns the lips frees the mind"). Dishes I can recommend: Rajas con queso, Chicken chile rellenos, Mexi-cobb salad with creamy jalapen~o dressing, Southwestern enchiladas (with a fried egg on top and the Green Chile sauce). Ask for the green chile rice instead of the mexican rice. I believe that there are some people actually affiliated with Chuy's on the list. If you saw "Eat the Heat", where Jill (Lewis, I think?) from Austin Slow Burn was chopping habaneros, that was one of the Chuy's kitchens. Her husband, Kevin, works for them.
