I find that if you clip the bottom of the roots, not all the roots just part of them, on the diagonal, and drop them in cool water, cover with 2 layers of paper towels, then a ziploc bag they stay well in the refrigerator for at least a week without much problem. Just keep them off the top shelf or they do freeze. If that happens, take the cilantro out for about an hour before using so it can thaw. Your suggestion is good though. I will try it.
