<< I find that if you clip the bottom of the roots, not all the roots just part of them, on the diagonal, and drop them in cool water, cover with 2 layers of paper towels, then a ziploc bag they stay well in the refrigerator for at least a week without much problem. Just keep them off the top shelf or they do freeze. If that happens, take the cilantro out for about an hour before using so it can thaw. >> Risa! It is difficult to find cilantro w/roots unless you grow them yourself or have an Asian Farmer's Market. We have a Laos grower who not only has cilantro w/roots, Thai Basil, and Thai Chiles-both Dragons and Birds, but a wonderfully HOTTTTTTT yellow orange Chile. When they harvest at the end of the season they just yank the whole plant up and sell them of $1 I bought several and froze the glorious extra Chiles. Don't know what these fiery hot yellow-orange chiles are, but they are far hotter than Thai Birds! Right up there with Habs.
