This was my breakfast this morning and it was really good. You can make it hotter by using a hotter salsa but I was using Chip's Serrano & Black Salsa, which is pretty good. Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 eggs (large or jumbo) 1/2 tsp salt dash water 2 tbsp Red Lion Red Serrano & Black Salsa 2 tbsp Monterey jack cheese -- shredded 1 slice Vegetarian Canadian Bacon (by Yves) -- OR 1 slice bacon -- cooked & crumbled Spray nonstick skillet with cooking spray. Preheat pan. In a bowl, add eggs, water and salt. Lightly beat. Add egg mixture to pan and cook, moving cooked eggs away from edge of pan and filling with uncooked eggs until all eggs are cooked. Add salsa to one side of the eggs. Cover with "bacon" and cheese. Flip other side over to form omelette. Cook for another moment to melt cheese. Serve garnished with cilantro, sour cream, sliced olives or sliced chiles.
