(rant mode ON) That's something that really annoys me. They (servers) smile, nod their heads and bring me something far short in the heat department. I don't care which sauce they have on the table, or what concoction the cook sends out for me to mix in. If I had wanted to do the cooking I would have stayed home. If I am expected to do the cooking I want a dang discount (does not apply to certain restaurants that expect you to cook your own). I want the dish at the desired heat level, no argument, with the heat cooked in, not sloppily added as a raw-tasting goo after being served. Yes, I know about "being a repeat customer" and "getting to know the staff" so I can "gain their confidence" that I can handle the heat and not send it back complaining about too much heat. But this happened at places where I WAS a repeat customer, KNEW the owner/chef and his wife, was KNOWN by the staff that had to keep fetching the chopped chiles in oil. They still cooked with insufficeint heat. (rant mode OFF) Scott... they made a killer zombie, though... KCK
