Being the food experimenter that I am, I altered the creap of jalapeno soup recipe that's in one of the CH recipe volumes. What you see below is a change based on my taste and available ingredients (i.e., I had to wing-it). The recipe is altered only slightly, directions mostly. I love the flavor of jalapenos, so this isn't a "barn-burner". It's like a fine wine, one you eat to enjoy, not to sweat over ... unless sweating from peppers is what you desire. ;-) Then, hey add more peppers of your choice! Ted's Cream of Jalapeño Soup 2 - 14 ounce cans of low-sodium chicken stock 2 cups half and half 1 cup low fat buttermilk 2 tbsp. Worcestershire sauce 3 carrots, sliced 2 medium yellow onions, cubed 3 medium Idaho potatoes, cubed 2 green bell peppers, seeded and diced 2 red bell peppers, seeded and diced 2-3 tbsp. butter 1-2 tbsp. minced garlic (range depending on taste) 1 cup grated mild cheddar cheese 1 cup grated baby Swiss cheese 1 cup cubed Brie cheese 4 fresh jalapeño peppers, cubed or diced (quantity to taste and seeded if you wish) Jar of sliced jalapeño peppers or fresh sliced jalapeño peppers as garnish Dash ground pepper In a large pot, heat chicken stock, cream, buttermilk, Worcestershire sauce, cubed potatoes, 1/2 of jalapeño peppers, and black pepper. In a LARGE frying pan, sauté until soft the onions, garlic, 1/2 of jalapeño peppers, red & green bell peppers, carrots in butter stirring often. Once veggies are soft, add to soup. Bring to slow boil and reduce heat. Simmer for 90 minutes or until potatoes are soft stirring occasionally. Remove from heat. Cool and refrigerate over night. Reheat or warm in crock-pot and serve the following day. Add cheese stirring constantly. Once cheese is incorporated taste soup. Add more jalapeños if desired. If you like the sharpness of regular Swiss cheese, use regular Swiss cheese in place of baby Swiss.
