I am partial to bacon fat, rendered from good quality double smoked bacon myself. Other than that you can use any chili recipe you please. If you have never had elk before (it's delicious, perhaps the tastiest of all the venison meats) I suggest a mild chili that doesn't mask the natural taste of the elk. YK Jim ..
