Rocotos are in my opinion the most universally useable peppers. They 
are good in everything I can think of. If you plan to discard the 
central hot part with seeds, slice the top off very near to the top 
as you would a bell pepper and then use the knife point to detach the 
inner core. If you want to use the central part, cut around the top a 
bit further down with the knife point just through the wall of the 
pod at a 45deg angle. Lift up the top with core attached and scrape 
off the black seeds with the knife blade. De-stem and you're ready to 
go.

Drop one into a blender with the liquid components of a salsa and 
whiz it up. (Hold your breath when you open the blender!) Mix with 
other ingredients. Plent of heat for a US cup size of salsa (8fl oz).

Or - whiz with the liquid components of a chocolate cake!

Stuff and bake with whatever you like as per Dave Williams' suggestion.

Cut pods in half to make little boats for your favourite hors 
d'oeuvres or snack. (e.g. filled with cream cheese + blue cheese and 
celery stickettes.) Or cut the pods into rings and stick an olive in 
the middle.

Chop and stir fry with your Chinese veggies.. Use breathing equipment.

Blanch or nuke, mash with back of spoon and spread on crusty bread 
before dipping in olive oil + your favorite herbs.
