I recently made some Sambal Oelek, which is, in a nutshell, chilli paste. It's made from dried chillies, soaked in water for a while, and then blended with (in my recipe), garlic, salt, vinegar and oil. The recipe I had was about 80% chillies. I originally put it in the fridge, so the oil in it made it go quite firm, but I recently took it out, and was quite happy with what happened. Most of the oil in it came out of solution and rose to the top. I eventually poured it off and it is the best looking chilli oil I have ever seen. The colour is just amazing. It's almost bright enough to glow in the dark. I didn't intend to end up with chilli oil, and although it's a convoluted method, I'll definitely give it another go. Nick
