<<lurking device OFF>> Greetings, fellow disciples of El Grande! Question first: anybody know of an online resource for Andy's Good 'n' Hot Stuff? I was given a couple of jars of their habanero salsa as a present some time ago, and quickly developed a dependency. Now I'm in withdrawal. Second, a recipe I whipped up for dinner on Sunday (cooking an anniversary dinner for my parents; this dish accompanied pesto-crusted salmon and buttery onion rice): Spicy Green Beans (from Madhur Jaffrey's "Indian Cooking") Ingredients: 1.5 lb fresh green beans, cut into 1/2 inch lengths 8 oz. fresh tomatoes, peeled, seeded and finely chopped (I used one 14-oz can of diced) 10 cloves garlic, or to taste, peeled Piece fresh ginger, about 1.5 inches long by 1 wide, peeled and coarsely chopped 12 oz. water 5 tablespoons vegetable oil 1 or more dried hot red chile, crushed 2 tsp. cumin seeds 2 tsp. ground coriander 1.5 tsp. salt, or to taste 3 Tbsp. lemon juice, or to taste 1 tsp. ground roasted cumin seed (I used 1 tsp. commercially-ground cumin) Freshly ground black pepper Instructions: Put the garlic cloves, ginger and 4 oz. of the water in a blender or food processor and blend until fairly smooth. Heat the vegetable oil in a large deep pan over medium heat. When hot, add the 2 tsp. of cumin seeds. About 5 seconds later, add the crushed chile. As soon as it darkens, add the ginger-garlic-water mixture. Stir about 1 minute. Add the ground coriander and stir for a few seconds, then add the tomatoes. Stir and cook about 2 minutes. Add the beans, salt and remaining 8oz. water. Bring to a simmer, cover, reduce heat to low and cook until beans are tender, about 8-10 minutes. Remove cover, add lemon juice, ground roasted cumin and as much pepper as you want. Increase heat and boil away remaining liquid (stir as necessary). Can be served hot, but are also excellent cold, especially with leftover rice. Right, back to lurking...
