Here's a soup I threw together last night. Chipotle Soup serves 2-4 ------------- 2 T olive oil 1 medium onion, chopped 1 small can of sliced mushrooms (optional) 2 14.5 ounce cans of Chicken Broth 4-5 Chipotles salt to taste Sweat the onions in the olive oil until transparent add the mushrooms. De-stem the Chipotles add the chipotles Let cook for two minutes on medium heat add the Chicken Broth Let simmer one hour or until the broth is colored a nice orange brown and the chipotles are soft Garnish with thinly sliced avocado, crushed tortilla chips, a dollop of sour cream and cilantro.
