Tom, Try pear butter. It's pretty simple. Peel and core your pears and cook them until they are soft and then puree smooth with a little water, lemon juice and however much sugar you like, if any. (I usually use a steamer/juicer and then run them through a food mill.) Season with a little cardamon and vanilla. Cook them on very low heat some more until they get a nice thick consistency, where a wooden spoon stands upright in the pot. Make sure you don't scorch the pot. Spoon into clean jars and process in a hot water bath for 20 minutes. Great on toast in the morning.
