I never wait until every chile is ripe. I pick a few green. I cook with them, chop them and eat them fresh. It helps the plant to make more chiles if you keep picking them. Then I also wait and pick a few of them when ripe. Those are the ones I take the seeds from. Those are the ones I freeze, dry and pulverize for future use. Some folks wait, some don't. Either way you get a different flavor each time.
