I thought the same thing the first time I tried dehydrating peppers. Seeds from chile peppers dried in a dehydrator will usually not be viable. There's life in those seeds and they just can't take the heat. I don't know the specific conditions (temperature, exposure time) beyond which the seeds will be destroyed, but there are dehydrators with a temperature control. So it may be possible to dry peppers in one of these dehydrators at lower temperature and still have viable seeds. Mike Benson
