Okay, I hijacked a recipe for raspberry vinegar, and changed it a bit. In a medium saucepan, heat two cups white vinegar with two habaneros, chopped fine, to 180 degrees F. (I have a thermometer, but this was jsut at the point where bubbles start to form on the bottom of the pan.) Add one 10 oz. jar "all fruit" apricot preserves. Stir, and heat to 160 degrees F (lots of steam, just before bubbles form). Remove from heat, and let chill in a tightly covered jar for 5 days. Store in the refrigerator.
