Hello fellow ChileHeads! This is my first post, but I have been reading the Chile-Heads digest for a month. If anyone is interested, I am trying to get a Chili Pepper forum started on www.GardenWeb.com. If any of y'all are not familiar with GardenWeb, it is the premier gardening website on the internet. There are hundreds of topics dealing with gardening, except they're missing one thing - chile peppers! I'm not wanting to detract any attention away from the chile-heads digest - that's the last thing I want to do. If we can get this forum, just think of all the people we can educate and enlighten, and maybe convert! It was the gardenweb vegetable growing forum that got me so interested in chile peppers in the first place, and that led me to here - the Chile-Heads digest. The veggie forum is currently the only place to post topics regarding chiles, meaning you have to wade thru all the veggie topics about rhubarb, celery, potatoes, squash, etc... to find any chile pepper stuff. If there was a chile pepper forum, you could go straight to it. My favorite pepper is the Orange Habanero. I made an Orange Habanero extract that is fantastic! All I did was throw about 20 pods in the blender (stems removed)and pour in a pint of pure grain alcohol. Puree for about a minute. Pour into a quart size mason jar. Let it settle for about 3-4 hours. Double boil it in the mason jar until the alcohol reduces to the content of your liking (we're talkin' 195 proof stuff here y'all!). If you don't want to reduce the alcohol content, that's fine. You got yourself some high-octane denatured alcohol that's good for scrubbing the garage floor. The less alcohol, the better the flavor of the habs. There is some good heat in there, but not overpowering. And it still has that teriffic Orange Hab fragrance and taste.
