This was tonight's dinner -vegetarian burritos. This is the second adaptation of this recipe. I've made these before, similar anyway, and this is the latest adaptation. Really good... * Exported from MasterCook * Vegetarian Burritos II Recipe By : RisaG Serving Size : 4 Preparation Time :0:00 Categories : Beans & Legumes Cheese Chiles Main Dishes, Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 10 inch flour tortillas -- * see note 1/2 cup onion -- chopped 2 cloves garlic -- minced 1 tbsp vegetable oil 1/2 tsp ground cumin 1 tsp chile powder 1/2 cup red bell pepper -- chopped 1/2 cup green bell pepper -- chopped 1 fresh chile -- chopped 1 carrot -- coarsely chopped 1 3/4 cups black beans -- cooked 1/2 cup canned tomato -- diced salt and pepper -- to taste 1/2 cup Monterey jack cheese -- shredded 1/2 cup sour cream or plain yogurt 1/4 cup cilantro leaves Garnish: reduced fat sour cream cilantro -- chopped fresh chiles -- chopped Preheat oven to 350°F. Wrap the tortillas in foil and place in oven until heated, about 10 minutes. Meanwhile, combine onions, garlic and oil in a large nonstick skillet. Cook, stirring over low heat until the vegetables are soft, about 5 minutes. Add the cumin and chile powder; cook for 30 sec. Add peppers, carrots and cook, stirring, for 5 minutes. Add the beans, tomato, fresh chile, salt and pepper. Cook, stirring, until the flavors are blended, about 10 minutes. Remove from the heat. Stir in the cheese. Line up the tortillas on a flat surface. Place a spoonful of veggie mixture in the center of each, dividing evenly. Top each with a spoonful of sour cream or yogurt and a few cilantro leaves. Fold the sides of the tortilla over the filling, forming a square, and roll up. Serve warm.
