Jens, I used white vinegar, and the spices, lemon and garlic, NO heat processing as I keep them in the refrigerator. If you heat process it makes them mushy IMHO. They age and develop a wonderful flavor. Great for snacking or cooking, but we are eating them mainly straight oh yum. Great popped into a Martuni. I use a normal Spanish Sherry. Infact I put some in Extra Fino Sherry and some in a bottle of Bristol Cream Sherry. Oh, and they are awesome in Vodka LOL Definitely what we call an ice breaker at a party! I also love them in honey. Last year I also chopped Habaneros and placed in a jar of honey as it is a natural preservative. Pack chopped chiles in a jar, and pour the honey over them.
