Here a follow-up for Alex Silbajoris' Chile Tequila and for any one else who has chiles preserved in alcohol. Alex, thanks a lot for that *cracks knuckles* post which reminded me to write down my Shitake Teaser from a few nights ago. Last season I preserved Tabasco and Thai peppers in Golden Sherry. Since it is time to use those bottles up, I was very generous with this infused liquid ... * Exported from MasterCook Mac * Knock-out Shitake Teaser Recipe By : Eruna Schultheiss Serving Size : 2 Preparation Time :0:30 Categories : Appetizer/Snack Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 dried Shiitake mushrooms 3 tablespoons soy sauce 1 tablespoon rice vinegar 2 tablespoons sugar 1/2 cup chile infused golden sherry 5 chiles -- finely chopped Soak the dried Shitake mushrooms in hot water for 10 minutes. Drain. Remove and discard the stems. Cut mushrooms into stripes. In small saucepan mix the ingredients for the sauce. Add several of the finely chopped, sherry infused chilies. Add the mushrooms and saute until the sauce thickens. Enjoy the heat! At least I didn't add Natto to this one ... Mostly every one is able to find dried Shitake mushrooms, aren't you?
