I did get to see & hear Cameron Begg (the Brit) when he was meeting MaryAnne & Steve, hearing the irony of being MAC owners/lovers but of course! -Rael I think I met first, whose reputation I am not sure does him justice, he may be more interesting than previously thought (live up to that ha ha). -CaJohn who rescued me from being over an hour at the Inn smiling at all kinds of strangers driving up while waiting for the window of the escort -Alex who I don't know I ever saw in the light. (lol!) -um Susan the Chile woman and her loving support, who (whom?) I mistook for Mary of Mary & Riley who at that time I had yet to meet but must have seen many pictures as many faces looked familiar. It was bittersweet knowing of the disappoint of Tony and the sadness of Jim not able to attend... Now if I say anymore ya'll will feel left out if I forget to mention you and ya'll should remember me know cause how many folks would show up with a kitty and not offer her up for sacrifice??!! (although I was not offended that some of you offered). It seemed that there was plenty of food around raised for meat lovers with out my domesticated family member. LOL!! but tonight the thing that dragged me to the 'puter is how to prepare my chilies for powder and keep it HOT. Cayenne's : Okay I pinched off the green elf caps, while rinsing and as I am preparing to dehydrate I am sorta coring out 1/2 inch (1.25cm?) of the white stuff and big clump of seeds. Then splitting down the middle with my kitchen shears like fillet and flicking off 80% of the seeds while trying not to disrupt the membrane. snipping here or there to make the guys lay flat on the racks. remember these are the mutant large ones from Jim's fields. I know to dry them at 145ish until brittle and then to purchase a dedicated Chile grinder (coffee) and go to the neighbor chilehead and grind to powder over there. I have dehydrated a 3-4 here & there of the regular guys and froze them- don't seem to hot to me maybe its the freezing? removing too much membrane? being afraid to bite into an unadulterated pod?? Oh and to Bob and Sue HobbyFarmer--- I would like the recipe for your jellies I am learning learning learning. Anyone that has any refrigerator style recipes where all that boiling/emersing/canning work is not involved I am interested in. And also if I try to let unripe peppers ripen a bit should I leave teh stems on??
