However my favorites are: Tra Chang (meaning "weighing scale") and Golden Boy. The latter has a cute label, showing a baby boy sitting on a globe, cradling a bottle on the left arm with right thumb up. Both are excellent, adding a superb flavor to Thai dishes. Three Crabs Brand, liked by Vietnamese Cooks, contains fructose and hydrolyzed wheat protein, which suggests that it is not entirely naturally fermented (rather, fermented by hydrolysis and flavor-enhanced by additives). This gives it a somewhat metallic, artificial aftertaste. Taste several brands and choose your own favorite. Another wonderful special hot Thai ingredient is Roasted Chile/Chili paste (nahm prik pow) -- Often labeled as "Chile/Chili paste in soya bean oil." My favourite brand is Pantainorasingh in 8 oz. and 16 oz. jars. Mae Ploy brand is also good. I love it spread on crackers as well as using for many recipes including Hot and Sour Shrimp Salad.
