Snip: >...... there are also yellow moles (typically >served with seafood in coastal regions). Interesting. Recipe? Reply: Cameron -- I do not have a recipe offhand, but I know Mark Miller has one in his first cookbook -- "Coyote Cafe". It involves blistering yellow bell peppers and guero chiles in hot oil and then pureeing the whole mixture with romaine lettuce leaves (I think). I'm not sure how traditional his version is, but it is the only one I have seen a recipe for. I can say, however, that it is delicious -- I made a variation of it once a number of years back when I was still working in a restaurant. I served it over rare ahi tuna with tomato rice pilaf, black beans, and wilted spinach with garlic and goat's cheese. I will get the recipe when I am home tonight and post it.
