There was some talk about making mole a little while back. There seemed to be some consensus that it was too much trouble given that you can get some decent mole in the store. Well I haven't found that to be the case at all. What I do is make a big batch and then poor it into ice cube trays for freezing. Then the cubes go into a plastic bag for easy utilization as desired. It will keep quite a while that way. I find this particularly handy because all too often I can't find the green or red mole that I prefer in the stores. Brown mole is fine I guess but I can't say I care for it much.
