The new ten year old distillery bottling is an absolute smoke and peat monster! Just the thing for our Pacific Northwet winters... If you are going to make piri-piri, you would be better off using bourbon or rum. Using an expensive single malt Scotch for cooking is a waste of money and more importantly, a waste of the water of life...if you just have to try it, I'd recommend a inexpensive blend, Teacher's or Famous Grouse or something similar. Personally, if I was gonna get wild with chiles and alcohol, it would be with tequila. That might make an interesting piri-piri...worth a try, anyhoo. Richard
