Just leave it in the ground, dig it up when you need it. My wife, Mary, makes a large batch - puts it in several jars - keeps very well in the fridge. I don't see why it wouldn't keep frozen, after all the ground and the root freezes during our "New England Weather". Make your batch in a well vented area, it takes your breath away coming into a kitchen when Mary makes hers.
