This morning's digest had several posts on injecting meat. A friend uses a vacuum sealer to pull a vacuum on meat in a marinade. He says it opens the meat pores and whatever piece of meat he has in the container sucks up the marinade. There are microwave recipes available for making peanut brittle with chiles. A non c-h made some habanero peanut brittle for her c-h brother. I think she added a tablespoon of hab powder to the recipe, stuck it in the microwave and started it. Very soon she and her dog had to go outdoors to catch their breath, and wait for the microwave to finish and the house to air out. Unfortunately it was wintertime, in Canada...Margaret L
