These were really good and a great use for leftover turkey. Make it spicier
if you want to. It uses 1 chipotle.

Tortilla Stack Surprise

2 tbsp vegetable oil
4 corn tortillas
1 cup cooked turkey -- shredded
8 oz Green Zebra Fusion Sauce -- or green salsa
1 chipotle en adobo -- minced
2 tbsp chopped cilantro
2 tbsp pumpkin seeds -- toasted
1/2 Haas avocado -- diced
1 ripe tomato -- diced
reduced-fat cheddar cheese -- shredded
Garnish:
reduce fat sour cream
chopped cilantro
pumpkin seeds -- toasted
Preheat oven to 250°F. When hot, place tortillas in foil and wrap well.
Place in oven for 10 minutes to heat up and soften.
In small saucepan, heat together turkey, fusion sauce and chipotle, over
medium-low heat until hot. Remove from heat. Stir in chopped cilantro.
Right before making stacks, place half of the pumpkin seeds into the turkey
mixture.
Place 1 tortilla on plate; top with 1/3 turkey mixture, 1/3 of avocado,
tomato and a sprinkle of cheese. Top with another tortilla and top with the
same things. Top with another and then rub it with remaining green sauce.
Sprinkle with cheese and place in oven. Bake for 15 minutes to make sure
cheese is melted and sauce is bubbly.
To serve, garnish with remaining pumpkin seeds, cilantro, reduced fat sour
cream and serve with hot sauce, if desired.
