Brats are a subject near and dear to my chubby heart. We have a local market where the meatman makes his own brats and uses a jal mix that he gets from his grocery supplier. It gives the meat a sickly greenish hue but the taste is pretty nice for a moderate palate. Iowa is definitely not in the heart of chile country but this guy has told me he can't keep the jal brats in the meat case. People love them! I grill them as my favorite way of cooking.
