Mustard... so easy... all you need are the seeds, and whatever else you want to put in it. Grind up some mustard seeds, (I hear the black ones are the best), add vinegar and salt, and you have mustard... however.. you can put the whole thing in a food processor after that and add chilies, or honey, or horseradish, or all or whatever... I've done it, it's fun! The thing is, if you don't want it to be so smooth (like Plotchman's for instance), you should grind by hand.. if you want it to be very smooth, use a coffee grinder.
