Novice cook report. Accidentally *discovered* a lovely flavor combo. After trying butternut squash for first time, there were leftovers. The diced squash had been mixed with a very small amt of brown sugar, some ancho chile powder, salt, pepper and tossed in olive oil, then baked at 450 F. So the squash had only a hint of sweetness. I had thought about adding some fresh chopped chiles to see what that would do but didn't have any on hand. Instead, I mashed the leftovers and added some lime juice concentrate that was handy. Oh my goodness, that alone was a fabulous marriage. The lime just plays along top of the butternut squash flavor. Mmmmm. Fresh lime would be even better. Then I dumped in lots of El Yucateco green sauce (this particular bottle happens to be unusually hot). I added a bit too much hot sauce as I *almost* obliterated the taste of the lime. But still ... Delish, Delish. Gonna do this again! Anyone have a favorite recipe along these lines they would care to share? Altho the combo is *new* to me, I am sure many others have discovered it long before me.
