At the college I go to we have a great way of drying peppers which my Pottery teacher showed me. We simply place a rack ontop the kiln with spacers to keep it directly off the kiln. And we simply dry them that way. I can dry a shopping bag of peppers in a day at most two atop each kiln (we have two kilns). And according to which kiln we use (one is a glaze kiln and hotter than the bisque kiln) we can either have dried or a more roasted pepper (sorta brownish skin tone and smokey flavour). So for those with access to kilns at college they can dry peppers (even the ever so easy to rot habaneros) that way in great time. -- Rob QuePID quepid@quepid.org Harlan, KY --
