This was tonight's dinner. It came out great. Green
Chile Macaroni & Cheese. Combination of our favorite
salsa and macaroni & cheese. So good. Easy too. Served
it with some refried beans and a salad.

   1      cup           1% low-fat milk
   2      tbsp          unsalted butter
   2      tbsp          all-purpose flour
   1      cup           Roasted Chile-Tomato Salsa --
or your favorite
   1 1/2  cups          low-fat cheddar cheese --
shredded
                        salt
     3/4  lb            macaroni or other fun shape
pasta
   2      tbsp          cilantro -- freshly chopped

Put a big pot of water up to a boil. 

Measure the milk in a microwaveable cup (Pyrex is
good) and warm in the microwave on HIGH. 

In a medium-sized saucepan, melt the butter over
medium heat. Stir in the flour and whisk until the
mixture turns lightly browned, about 2 minutes. Add
the warmed milk all at once and continue to whisk. Do
this until it thickens and comes to a full boil. This
should take 4 minutes or so. If you whisk constantly
there will be no lumps in the sauce. Stir in the
salsa, remove from the heat and add the cheese. Stir
well until all cheese is melted. Season to taste.

When the water comes to a boil, add the pasta. Cook
according to package directions. Stir well so that
none of the pasta sticks together. Drain thoroughly
and return to the pot. Stir in the sauce, and spoon
into a baking dish. Sprinkle with cilantro.

Bake at 350°F for 10 minutes until the whole thing is
bubbly.

Serve with a salad or other vegetable, maybe some
refried beans and top with whatever you like (garnish
with sour cream, salsa, strips of roasted chile,
whatever).
