The main reason is to help blend the flavors together. This is gonna make like 10 cups of hot cocoa, so it's not much salt. I really am not a fan of salt (usually prefering to substitute cayenne pepper for salt in any recipe calling for salt), and am rather sensitive to salty flavors, and this definately doesn't have a salty flavor. It is OK without it, though. I have made it without - just doesn't taste as good...
