Well...  "Chocolate" and "Cocoa" are not the same thing.  Hershey's
chocolate is pretty milky, but the cocoa is the precursor to chocolate.
Our labeling laws in the US are pretty liberal (read: suck).  I mean, we
can buy all sorts of stuff labeled "white chocolate" that never had a cocoa
bean in its history, made entirely from vegetable oil....

The Ghiradelli coca is hard to find - the stores tend to sell Ghiradelli's
chocolate (ie, sweetened), and you could probably modify my recipe to work
with it.  The Nestle brand cocoa isn't too bad, and they do have a really
big warehouse/shipping facility in Ft. Wayne, so it does support the local
economy for all of us hoosiers...  But, I tend to prefer the Marsh store
brand.  Don't know for sure who makes it, but I do know they tend to import
a lot of their products from Russia (which is why their caviar is so good,
I'm told.  I don't like caviar, so I wouldn't know), because it's much
easier for them to export product from their store there than it is to send
cash. ie, basically, as payment for products they send to russia to sell
from that store, they use products manufactured in Russia.  Or, put another
way, the only real reason for the Russian store is to have a cheap way of
getting stuff they can sell for much more here.  Pretty slick, really...
