Well, quite fortunately, you are moving to an area that is inhabited with one of the great chile-head chefs of our time, Chris Schlesinger (I have posted many times about his cookbooks and his food). He is in Cambridge, MA and owns the East Coast Grill, Jake and Earl's Dixie Barbecue, and one other place, whose name I can't remember (the Blue Room, or something). I have never eaten at his restaurants, but his cookbooks (John Willoughby is co-author) are exceptional, and I have read his menus, which also sound fantastic. Chris is originally from the same place as me, Tidewater, VA, by the way. Also, Ming Tsai's restaurant, Blue Ginger, is in Wellesley, MA -- he's been known to eat a chile or two....
