Chayote is vegetable used in Lousiana, Mexico, Central and South America mostly. It's of the gourd family and looks rather like a pale-green, lumpy pear. It most closely resembles zucchini in taste and texture (which can be used as a substitute). It's also known as a mirliton or christophene and you might find it there named as such. They are delicious but not common.
