[CH] Dinner The Other Night - Tamale Pie

Another message that didn't go through the other
night. This only happens with some of my messages to
the C-H list. Weird.

Here it is...

This was dinner the other night (I haven't been able
to get online on 
my downstairs computer for a few days and I'm
backed-up on dinner 
recipes). Tamale Pie. Simple and really good. Enjoyed
this one.

                                Tamale Pie

     1/2  lb            turkey sausage
   1      lb            ground beef
   2      cups          celery -- sliced
   1      cup           onion -- chopped
   2      cloves        garlic -- minced
   1      11 oz can     kernel corn -- drained well
   2      tsp           pure chile powder
   1 1/2  tsp           salt
     1/2  cup           yellow cornmeal
   1      6 oz can      black olives -- pitted &
sliced
   1 1/2  cups          cheddar cheese -- shredded
                        Paprika

Cook sausage and beef together in a skillet until
browned; stirring to 
crumble. Drain well. Stir in celery, onion, and
garlic. Cook until 
tender and barely brown. Stir in corn, tomatoes, chile
powder and salt. 
Simmer 15 minutes.

Slowly stir in cornmeal, cooking until thick. Remove
from heat; stir in 
olives. Pour into a greased 2 qt casserole. Sprinkle
with cheese and 
paprika. Bake, uncovered, for 350°F for 35 minutes or
until set.

Serves 6-8 people.

I omitted the corn because it is too high in carbs. I
deleted half the celery and used ground turkey instead
of the beef. It was really good.
