For the cooked turkey, I used already cooked "mexican meat" - which is a combination of ground turkey, onions, tomatoes and chiles that are cooked together. I freeze it in small packages for quesadillas, enchiladas, burritos and such. I used 1 cup of this mixture. If you wish, you can use just straight cooked ground turkey and cook some onions, tomatoes and chiles together until the turkey is no longer pink and the onions are brown.
