Here is a recipe that my family likes--you can add heat if you like.  I
usually use a seranno or two to give it heat, and then add Tabasco or
Louisiana Crystal sauce. You can substitute nearly any meat you would like,
we like sausage and pork, but have made it with chicken and sausage.  I've
got a son allergic to shrimp and shellfish.  This is a smallbatch -- I
usually make a triple batch or so, we feed 6-8 people on a given day.

Ingredients

1/2 lb. cubed pork
1/2 lb. Smoked sausage  (sliced)
3/4 cup chopped red and green peppers
1-2 seranno peppers minced
1/2 cup chopped celery
1 1/2 cup chopped tomato
1/3 cup chopped scallions
1 cup chopped white onions
3 cloves garlic (cut in half - crosswise)
2 cups uncooked rice
1 tbsp extra-virgin olive oil
3 1/2 cups water
1/2 can 6oz. tomato paste
tobasco type sauce (get the good stuff like tobasco brand or Louisiana
brand...trust me, there's a difference)
pinch thyme
pinch marjoram
pinch salt
pinch pepper


Pour olive oil in a medium hot cooking pot.  Add the pork cubes and cook
under medium flame for about 10-12 mins until slightly brown (don't overcook
it).  Then add salt, pepper, kielbasa and cook for another 5 minutes.  Then
turn off flame and drain all the oil from the pork mixture.  Then add all
the veggies and water into the pot and cook under high flame for about 5
minutes or until simmer.  Then stir well and add rice, tomato paste, thyme,
and marjoram.  Cover the pot and cook under low flame for approximately 20
mins.  When rice is done (soft and fluffy), add 6-8 dabs (or more) of
tobasco sauce and stir well.  Cover and cook for another 2-3 minutes and
then serve with a smile.  I use a large dutch oven 'cause I feed 6-8 people.
