After reading Jim and Mary's responses to bottling your own, there isn't much 
more to add.  The hardest part is getting your product from blender recipe to 
vat recipes.  On SauceMall.com there is a great Food Developer under the 
"Make your own" section.  I started writing that more as therapy and luckily 
it has helped a few people.

A food developer is a big part of the process, mostly because the person can 
help communicate your process to a co-packer.  Co-packers sometimes get 
frustrated with us smaller guys, so it is nice to have an "in-between" step.

Good luck and if you need any help...you have a lot of people on this list 
who could write their own book!
