Here, again after about four years, is my tried and true recipe for Drunken Hen, Gallinas borrachas: 3-4 lbs cut up frying chicken 1/2 cup shortening or lard 3 peeled tomatoes chopped 1 good sized onion chopped 2 tbls chopped cilantro 1 slice of cooked ham, 3/4 lb 1 chorizo, or if unavailable, garlic sausage 1-1/2 cups of good dry sherry 1/4 tsp each of cloves and cinnamon 1 dash of nutmeg 1/2 cup each of seedless raisins and blanched almonds, chopped Fry the chicken pieces in the fat, and when brown, remove and retain one tbls. Add the chopped tomatoes and onion and cilantro, and cook about five minutes. Add the ham, chopped up and the chorizo, spices, raisins, almonds and sherry and simmer for about fifteen minutes. Add the reserved chicken and cook for another five minutes. If too thin, thicken with a mixture of corn meal and a little water. Notice that this is not overly spiced with chiles, so add to your own taste level. I usually throw in a couple of my own dried Thai chiles, or sometimes a hab or two.
